Carrots are a popular and cold hearty root vegetable. More specifically a taproot: a single conical-shaped root that tinier, feathery roods emerge. Its shape depends on the conditions of the soil and climate. With a sweet flavour profile, they are found in many colours including yellow, white, orange, red and purple.   

Storage tips: After purchasing carrots from the farmers market, remove the tops. The tops of the carrots are edible and can be used in salads or even pesto! Place the carrots in an airtight or zip-top bag as you want to avoid exposing them to sunlight or air.
